I want to be self sufficent , self motivating , free from schedules , while working from a bench in the sunshine while barefoot . That brings me to a thought. What would you do if you had the opportunity to work for yourself and offer financial security while enjoying life on your own terms and schedule ? Have you ever thought about it or allowed yourself to dream or are you comfortable in corporate america punching a time clock while be a prisoner to debt ? If money were no object are you willing to give up all of lives modern conveniences and live life by the seat of your pants and land wherever the wind blows you ? My answer is YES !! These days there so may pyramid schemes that are blinding people into believing they will get rich from a patch or a mascara and guess what , they fizzle out over time and you are left with inventory that you can’t give away at a garage sale . The only way to self wealth is to work for your self on your own ideas with your own passions . Ask yourself a few questions to determine your path you will take to success . Have a serious heart to heart with your family and decide just what you are willing to sacrifice , if anything at all . Do your homework and think about all aspects when it comes to what kind of work you want to do . Produce a product ? web based? inventory ? investment ? the list goes on and on . Keep good records and take your time dont just settle on an idea without researching all angles of it and the pros and cons . Once al of the stressful stuff is done have fun and let your imagination run wild and get creative . This is your future and it should be takin seriously and without doubt . Best advice to give you is not to share with friends or family until you are ready to launch as to not let any negative comments or ideas deter you from fllowing through . Grab a pen and notebook and jot down your ideas and RESEARCH RESEARCH RESEARCH . When you are ready, close your eyes and imagine yourself on the edge of a cliff over looking raging water with crashing waves and the sun on your face with your arms out reached as far as you can and take the leap and trust that your courage will be your wings and you will fly .

The old saying “keeping up with the Joneses ” is such a sad story . As a spoiled nation we have chosen to believe in the dream that money is what we all need and strive for when in fact it is the poison that is tearing families apart . For instance there is a wife somewhere feeling neglected at home while her husband is spending 14 hours a day away from his family working to afford the lifestyle to which they have become accustomed . He comes home exhausted and all she can think of is how she would love a hot bubble bath away from the kids alone and all he can think about is how all he wants is a nice warm meal and to relax . Then after maybe a hour or two together spending time with the kids that he never sees because he is too busy working to provide , it’s time for bed and to get up the next day and do it all over again . It is a vicious cycle that most of America has fallen into . When in fact if we all looked around and decided what was actually important , we could all be much happier with much less . I am a prime example , I have a 12×12 spare bedroom that my husband has hung numerous shelving units and hanging poles for clothes that is now my closet . It is AMAZING and I’m very lucky to afford such things along side a very impressive collection of designer handbags that I rarely use . We have a home that is double the square footage that would actually be sufficent for our size of family and yet we have filled it , including the garage, with “stuff” that we love and enjoy . Once we realized all of the things we have collected that we no longer need nor use it’s time to downsize . I’m not sure where my need for things started but I do know now that I don’t NEED things other than the essentials to be comfortable and healthy . We have raised our childeren to be spoiled and with the idea that life comes easy as long as you just ask for something . I wont bore you with my personal plan to declutter my world , just know that it is happening ! I guess all I am asking you to understand is my point of view , would you concider an evening at home with everyone in the family on a different electronic device all setting in silence engaging in their own converstions online instead of eachother to be more acceptable than a family dinner around a table where no phones were allowed ? I wonder if I have finally become an adult and now realize I would much rather take a long weekend to a new place that I’v never seen than to buy that new purse or outfit . I could spend that money on fuel or on maintenance so that I we may take another trip down the road . Once you decide you no longer need the big house or closet full of clothes of two living rooms full of furniture it opens up a whole new vison of possiblilties . You won’t have to work so hard or such long hours to afford the things you once thought you needed , instead you can relax a little and set back and breathe and really enjoy the things you do have as they are what’s really NECESSARY now and not just something you liked in the store window . Your time is more valuable that your material posessions, just ask your kids or your wife if they would rather have a few hours with you making memories or for you to have to go into work to afford to buy yourself that new set of golf clubs ? Now I understand with small kids it may not be as easy to downsize but it is possible to turn off the TV and the phones and spend time and for gods sakes don’t give them electronics at such a young age . Teach them that outside is a good place to be and how to communicate to eachother rather than how to text or how to beat the newest video game . Not only will they learn to be productive adults it would also cut down on childhood obesity which in turn will insure they stay healthier and be happier . The next time you are out and about to buy something ask yourself , is this necessary ? do I NEED it ? could I spend this money spending time with my family or simply putting it away for later ? I am very spoiled and I am the first to admit it but I also now understand the importance of mental heath as opposed to material things . Take a look around your homes and I guarantee you will notice just how much you have that you dont need or even remember buying , sort it out , have a garage sale , or donate to a charity. Simply make room for a clearer conscience and positive mental state while loving eachother and yourselves and take a step back and enjoy life instead of having to work so hard to pay for it .

- 1 lb. Italian sausage
- 1 20 oz. package frozen tortellini
- 1 small onion
- 1 Tbs. minced garlic
- 3 C. fresh spinach (chopped in bite sized pieces)
- 1 C. heavy cream
- 3 C. chicken broth
- 1 14oz. can diced tomatoes with oregano and basil
- shredded parmesan for garnish
- In a heavy pot add onion and garlic and cook until it start to smell delish and begins to become transparent
- Add the ground sausage and cook until no longer pink
- Add the chicken broth and can of tomatoes and bring up to a slow boil
- reduce heat and allow it to cook down for about 20 minutes
- Add salt and pepper to taste
- Add heavy cream and tortellini and give it a stir to cover your pasta
- Cook until the pasta is tender (usually 7 – 10 minutes )
- Add the spinach and cook for just a few more minutes until it is wilted .
- Serve with shredded parmesan on top and nice slice of garlic bread .
Yesterday as we celebrated Independance Day with family and friends it was all fireworks and BBQ grills and fun and laughs . And then this morning reading the news article of a shooting that is being investigated right here in our town once again it is sickening . So much crime in this country against eachother and for rediculous reasons .We live in the best country imaginable and these idiots thank its ok to turn on their brothers, neighbors, or even a stranger over something as simple as a wallet or the way one chooses to dress . Every single day you read a new article about a different crime and it is terrifying that we can’t even trust to be in a unfamiliar place without being worried about our kids being hurt or taken . or the things we work so hard for being taken by someone not willing to work for themselves . We have had our vehicles broken into in our very own driveway just outside where we were sleeping and after the anger wore off the reality set in of just how sad our society has become . Exactly the reason we have the right to keep and bear arms to defend ourselves against all the bad and evil and lots of people want to complain about that . Here is an idea, stop complaining about the way we choose to protect our own and clean up the crime around you . Stop babying your kids and allowing them to be disrespectful and running the streets like hoodlums and know their friends and where they are so they dont grow up into the adults that are out here stealing and killing eachother . People think I’m kidding when I say we are going to the country to our piece of solitude away from it all . You can’t control others or their actions so instead practice self preservation and be descent human beings to eachother . We shouldn’t fear in our own community and the crime is nationwide and only getting worse. We are leaving behind a generation where you could sleep with your doors unlocked and have turned into a paranoid mess . There are drugs and robberies and human trafficking right here under our noses and that sucks that their are people who think they have the right to take our children and force them into something so horrible . We are human beings not objects and not one of us have the right to take things or harm eachother . Im just so disgusted with our surroundings and all the articles day after day of the same things and never hearing anything positive in our news . We are a nation out of control and we should all be ashamed of the way we are leaving things for our kids and for their kids . In the meantime take care of yourselves and eachother and stay safe as I am currently looking for a magic bubble to put my family in .

Hello my friends !!! I have missed you so much . Alot has been happening and I simply lost track of my focus but I’m back in full swing ! It is summertime and Iwill have lots to share with you as we go along . Lets see … where to begin ? We now have a senior in highschool which brings brings tears to my eyes thinking our last baby isn’t a baby at all anymore , but She has plans for herself and her future so for that I am proud . And we have a grandbaby on the way !!!!!!! I’m so freakin excited I can’t stand it . more on that to come alter as we learn more . We haven’t gotten to travel as much as we would like but we do have plans too and will of course keep you updated with plenty of pics and video , hoping to hit the road soon and as usual we do have our pland to go to the lake plenty with the jet skis as that is our happy place ! Hey Guys !!! I know it has been a while since my last blog post but girl has been busy ! Not a specific topic this time but rather a overall update on our world . It is mid November so we have had Halloween and a big cook out where our friends and family all came over and we carved pumpkins and just hung out . I am prepping for Thanksgiving and Christmas, Yes me tree is already up and the shopping is ALMOST done ! I have been stalking Pintrest for new recipes to try but lets be honest , we will probably fall back to our faithful standbys . I am patiently waiting to get out the ugly Christmas sweaters until after Thanksgiving . Some of you may remember that we got a new puppy . She is a boxer and her name is Maddie Mae , she is doing great and is fitting right in to our crazy household . Beast and I did take a trip to the lake once the weather turned a little cooler and it was amazing . Not alot of traffic and the cool temp was perfect with the campfire . All of family and friends are doing great and I love that we are all spending more time together and making the most of our time . Our weather of really odd for November (mid sixties) Im hoping it will level itself out soon and get back tot he expected temps for this time of year . I could go more in depth on a daily or even weekly level but like I said this was just a chance for a overall update on where we have been and why the lack of post lately but I promise I will be posting more often and will be sure to bring you any new recipes that I find that are worthy . I have had a few recipe fails latey so we won’t mention those ! Any way … It was great to be back and I’ll talk to you all again soon !

As you can see we got a new facelift on the website ! As with everything in life things get boring and mundane and eventually we fall into a trap of repetition and things becomes “normal” . Well not anymore !!! Its time to love it like your about to lose it . Do something crazy … do something so out of your comfort zone even you have to say “what the hell did I just do” . Have no regrets or “wish I would have” moments . I am so sick of the same old thing day after day , we have 365 days in a year and when they all start to run together you know it’s time to shake things up ! stop trying to please everyone and put yourselves first for once. Who cares what others think , what’s the worst that can happen ? They judge you ? so what , none of it matters in the end anyway . I am s tired of seeing people treat others bad because they don’t agree with their decisions . Take a chance …. jump into that business venture you have dreamed about , take a class , nothing is going to change unless you change it . It is exhausting just living to pay bills and learning to adapt to your surroundings . I for one am so set in my ways that I struggle with change but I am determined to get over that . There are so many choices on new things to try that the hardest part is deciding which one to try first and if that one fails try the next one . I have been so emotionally drained since loosing my son that I had no interest in changing but now I realize more than ever that that is exactly what I need ! I will be doing some research into different options and I will keep you updated ! I need something fun and challenging and totally different and I am looking forward to the adventure . Do yourselves a favor and really ask your self if you had one week left what would you do ? Would you go bat shit crazy and risk it all or be sad and scared ? We are all worthy of a good life and we need to remind ourselves more often to enjoy it and not get stuck in the “normal” . I challenge you to do at least one thing this week out of your comfort zones and I’d love to hear what each of them are . Now if you will excuse me I need to get busy chasing the change !

A fun alternative to a cheesburger !
What I used :
1 lb ground beef
1 medium onion
1 1/2 C. shredded cheddar cheese
2 tbsp dijon mustard
1 tbsp worsteshire sauce
1 C. bacon bits
salt and pepper to taste
How I did it :
Pre heat oven to 350′
Start by cooking down your onion in just a bit of oil just until tender
Add the ground beef and cook throughly
Once your meat mixture is done drain it completely of the grease
Move it to a large mixing bowl and add the remainder of the ingredients except the sesame seeds
Start to assemble your eggrolls by wetting the edges of the egrroll wrapper with a small amount of water to help it seal
Put a heaping helping of the meat mixture in the center of the wrapper begin rolling it as pictured until you have all of them rolled and ready
Place them on a baking sheet that has been sprayed with non stick cooking spray seam side down
Brush the tops of each with just a light layer of oil or butter just enough for the sesame seeds to stick
Place in the oven until golden brown approx 12 – 15 minutes
You only got one chance and one opportunity … A very wise young man taught me a very valuable lesson , Live in the moment . Plan what you can and let the rest play itself out as it will . Don’t stress over things you cannot change at the moment . And when things get crazy laugh and learn from it but move forward . If you spend your life planning and stressing you forget to live , He may be young but by god he knows the meaning of life and how to enjoy it , no regrets . Ask yourself how many times just last week you stressed about work or that upcoming bill and then ask yourself how many times you laughed and enjoyed yourself and put your feet up and relaxed , now whichone has the higher score ? I can bet it was the first one . We weren’t made to work our lives away for “things” we aren’t able to enjoy because we are to busy working to pay for all of it . It isn’t fair and rather depressing when you think about it . We are the authors of our own stories and I challenge you now to rewrite last weeks chapter and to look at next weeks with fresh eyes and try not to use such a heavy hand when writing the grown up stuff like work and bills , instead give yourself some breathing room and treat yourself at least once , YOU DESRVE IT ! If something goes wrong , shrug your shoulders and remember “It’ll buff ” it’s a tiny bump and it isn’t a crisis . You are smart and kind and deserve a great life , go live it . I am the first one to say I have sabotaged many things in my life and now I see the better side and realize it is short and there is no guarantees on a timeline . My advice to you is to grip the throttle, hit 4th gear and dont look behind you or you will get passed , If your goggles get muddy wipe them off and keep rippin towards that checked flag !!

SPICY SHRIMP AND SAUSAGE SOUP
What I used :
1/2 lb. medium shrimp peeled and deveined
1 15oz. kielbasa cut into bitesize pieces
1/2 medium yellow union diced
1 small bell pepper diced
1 small red bell pepper diced
1 tsp. minced garlic
red pepper flakes
small can of sweet corn
zataraines shrimp boil seasoning
How I did it :
1.Start by cooking the onion in a small amount of olive oil in a stock pot for 1-2 minutes.
2.Add both the green and red bell peppers and cook for another 2 minutes.
3.Next add the Kielbasa and the shrimp.
4.Now you add the chicken stock and can of corn (undrained)
5.Give it a good stir to get it all mixed together nicely and to ensure it is all properly sumberged .
6.Now comes the spice, Add as little or as much of the pepper flakes according to your personal preferance on heat .
7.The zataraines shrimp boil usually comes in a pouch that you simply put into the pot and boil for as long as the box directions call for depending on the seafood you are using ( shrimp, crawfish, etc. )
8.I brough it to a heavy boil and allowed it to cook down for 30 minutes
9.Remove the shrimp boil pouch from the soup and dispose of it and Waa Laa !! Spicy shrimp and sausage soup .
Family is a unit undivided .. Our family is a perfect blend that I am very proud of , we all came together as two seperate families and quickly melted into one and now we are an army ! Just proves you don’t have to be blood to be family . Our family consist of Monty and I and our 4 children and on top of that a handful of great friends that we concider our family . . We are strong and have been through more than most families ever will in a lifetime , from the tragedy of losing one of our own and distance apart from one another as our adult kids make lives of their own yet we are a team and come together when we need eachother . We are lucky to have such a great dynamic and I would dare anyone to cross one of us without the others there to rally ! There is nothing we wouldn’t do for our extended family as well and that goes the same for our friends that are close to our hearts. One thing we have learned is that families that are tight have the best support system no matter the situation . You need me ? call . If I need you ? I’ll call . and know that we will all be there for everyone of you blood or not . Take it from me folks , love your family . Stay in close contact tell eachother you love them . Have get togethers and laugh and always take pictures !! Know the little ones and watch as they grow up , don’t hold grudges and be kind to eachother . This willbe a short blog post today but I just wanted to express the importance of each one of you in our lives and thank you for being part of our world . fresh salsa verde is always amazing on mexican food or even just chips and salsa . I shopped at my local farmers market for the ingredients .
What I used :
1 pound tomtillos
5 small jalapeno peppers
1/2 medium purple onion
1 teaspoon minced garlic
1/2 cup chopped cilantro
a few squeezes of fresh lime juice to taste (not too much )
1/2 teaspoon cayenne pepper
1/2 teapoon oregano flakes
1 1/2 cups water
1 teaspoon salt
How I did it :
you have to start by peeling the husk off of the tamatillos and cutting them in half
chop your jalapenos and onions into diced sized pieces
chop up the cilantro
then it is as simple as adding all ingredients to a deep pot and bring to a boil then simmer for approx 10-15 minutes until the tomatiollos are tender .
you are going to want to allow it to cool just slightly because the next step is to put it in the blender and pulse it until it is a good salsa consistency which only takes a few rounds of the pulse button .
wa la … salsa verde.
My version was spicy and of course if you want a little more heat just add more jalapeno or even try a hotter variety of pepper . Top a nice plate of tacos with your salsa and grab a margarita and enjoy !
As dog owners we all love our fur babies . We have 2 and I am sadly starting to realize they are both seniors and although still very active and healthy they are aging . The beast and I both have always had a dog even as kids so I am questioning if we are ready to not . On one hand the committment is a factor , it woudl be freeing to not have to make travel plans around a dog trather that be a pet sitter or taking it with and making sure we have everything in the coach they need (leashes, bowls, food, pet friendly area ) . On the other hand the companionship of a dog is awesome , they love unconditionally and are always glad to see you when you come home from a long day or even just wanting to set with you and just be content . They eash have their own personality and temperment . For example, Mimi our chihuahua is very possesive over the beast and is sure to let me know when I am too close by nudging her self between us but at night or when she isn’t feeling good she wants her momma . And as for the boxer …well she is special , If you have ever spent much time around a boxer you know they are big and goofy and usually want to play but can also be very loving and affectionate at least that is how our Roxy girl is . We have had 2 other dogs go over the rainbow bridge the past year and that is heart wrenching to go through as you raise them as part of your family and loosing them hurts just the same . Lately I have been thinking of the future and asking if I want to prepare ourselves now and get a puppy that we can raise along side our current 2 so that they will be there to help the little one learn and make the adjustment easier with house training and other things a puppy needs to learn . But then I think will a puppy annoy the chihuahua . We have a couple of grand dogs that would come over practically daily and Roxy LOVED playing with them and Mimi usually just rolled her eyes and reverted to the bedroom as to not be bothered . Roxy would love a puppy to run with play with and she is so gentle I would never worry about her hurting it . Another question is what breed ? big dog ? small dog ? male or female ? do we shop or adopt ? So many things to concider . We are soon to be empty nesters and will be a little more free to come and go as we please rather that be traveling or not and not having a dog would be easier but would be as happy ? I have a lot to mull over and discuss with the beast I guess . What is your opinion ? anyone else have this situation you have had to make a decision on ? I wil keep you posted on what we decide !

The summer has been brutal with the tempertures but soon fall will be among us . I love it !! hoodies and cooler weather and pumpkin spice everything everywhere . The colors of the leaves and the smell of the air. The smell of fresh baked bread and pumkin pie . Halloween is fun to see all of the little ones still dressing up and having a blast and then it’s on to Thanksgiving and over eating with the family and putting up the Christmas tree while shopping online and patiently waiting for the UPS guy everyday as he delivers things you had totally forgotten you had ordered ( not that I’m guilty of that or anything) . Before we know it we are ringing in the New Year and by then it has been cold long enough and all we can do is think about the spring that is right around the corner and complain about tax season blah blah blah … It is a vicious cycle that never ends . Summer seems to be the time families take vacations , I have been thinking of changing that up a bit this year . We had our amazing trip to Colorado last month but it wasn’t enough ! I am ready to grab the atlas and draw a line from point A to point B and take off . Most tourist type places are busy the summer months which only makes sense to visit in the off season . What do you all do in the fall and winter months ? travel ? hunker down at home and stay warm ? go to the beach where it’s warm ? sounds like a good idea to me . I think we should become snowbirds and giggle ! Or become gypsies and get lost along Route 66 . I hope everyone has enjoyed their summers and are ready for cooler temps like me , it’s time for the kiddos to go back to school and the public pools to close for the season and it’s on to the next . I am glad you all have stuck around and continue to follow my post it really is a great platform for release . We are coming up on almost a year already that I have built this site and I can say it has been trying but so very worth it !

We had these as a light dinner but could be served as a side dish as well .
What I used :
- 6 ripe roma tomatoes
- fresh shaved parmesan cheese
- balsamic vinegar
- salt and pepper
How I made them :
- preheat oven to 400 degrees
- slice tomatoes length wise and lay on a foil lined baking sheet (easy clean up and the vinegar wont bake into your pan )
- top each tomato with a nice layer of parmesan cheese
- drizzle about a teaspoon of balsamic vinegar over each one
- top with oregano and salt and pepper
- bake for approx. 7 minutes or until your cheese is golden brown
I hope you will try them , they would be perfect paired with a juicy steak . you may want to try them on the grill also .
A mandatory staple for dinner across america is of course pizza ! But what if you don’t want all of the heave tomato based sauce or even meat ? I chose to try a veggie pizza which I served cold . I will tell you what I did and use it only as a base suggestion and make it totally your own with whatever you may want for your toppings .
What I used :
store bought pre cooked pizza crust
red and yellow bell peppers
salt and pepper
How I made it :
Chopped and sliced all of the veggies into bite size pieces except the carrot I used a veggie peeler and and made very thin shoe string like laces.
Then I put a nice thick layer of cream cheese on the crust as the “sauce”
First I put down just a thin layer of lettuce and started layering my toppings and topping it off with the green onions and a drizzle of ranch dressing .
Wa la … Veggie pizza !
I may also try a fruit pizza next time with the same crust and cream cheese as the base . Perfect light dinner for the summer !
We just got back from a family vacation to Colorado and let me tell ya ….. Amazing ! I had never been to the mountains and I was completely awe struck with the beauty and the vast size of them alone but then I got to see up close and personal all of the nature and lakes and I can’t even discribe the views and the sounds of the waterfalls and the birds and just the serenity I felt being there . Ok lets back up just a bit . We packed up the coach and headed out for what was a roughly 7 hour trip to get there and that alone is a blast with the fam ! We of course jam out to the radio and I enjoy “adult beverages” while the Beast is the captain and drives . The kid is usually face deep in her phone texting and snap chatting but she also joins right along with the crazy parents and we always have a good time . We pulled into Colorado a little after 10 pm and got the coach all set and ready to house us for our stay . After a good nights sleep our son , who is a local , picked us up and we drove to Estes Park and as the typical tourist we stopped at the sign on the way up . The first thing I noticed was the driving and the curves and I must say I was freaked out ! They all went so fast and the roads were like hairpins and I realize that is normal for the area but it didn’t help my anxiety being in the back seat . Once in Estes I instantly fell in love with the area , the shops and the mountain view and just the whole vibe of the place . Everyone was so friendly and welcoming and I couldn’t help but notice how clean it was , they really take very good care of it and respect their land and that isn’t common these days in most areas especially a tourist town . I will be mentioning the restaurants we went too and will be linking the info in the names of each so you can all see the website and menus . First stop for lunch was to a place called “Locals Grill” in downtown Estes I would describe it as a cafe type of place , very good food and the service was friendly and the prices were really good . I wont give you a play by play of our days but I would like to hit the highlights for you and share what we seen and experienced . After lunch in Estes we drove further north to Rocky mountain national park and went for what seemed to be a 9000 mile hike up the mountain to see more sights and a few of the beautiful lakes , I will admit that you dont’t realize exactly how out of shape you are until you get into the higher altitude and head up a mountain . The first stop waymph lakes bear lake just at the base it was crystal clear and you could see mountains on all sides of you and the reflection in the water was amazing . Next we headed further up the mountain to nymph lake and it was equally as beautiful and it was covered in lily pads with bright yellow flowers that had bloomed on them and it truly was a awesome sight to see the mass amount of them all in one place and by this time this old girl needed a break so we sat on a bench under a tree for just a bit and took tons of pictures and caught our breath before finishing the trip up even further to dream lake and once we topped the ridge and the scenery opened up to the most beautiful place I have seen thus far , I was literally speechless , all I could do was look around and soak it all in and shake my head in disbelief that such a place exsists. Once I got over the mere fact of just how tiny we really are as humans and how amazing mother nature is I was able to enjoy it and set down and just embed the view to memory . It was time to head back down the mountain which by the way was MUCH easier than going up . We stopped at a sweet little waterfall and cooled off before going the rest of the way . As we left the mountain we decided to drive into Boulder were our son will be attending the University of Colorado next semester and wanted to see where it was and see the campus , it is HUGE and very well kept grounds and appears to be pretty busy with students roaming around. As we came into town the Flatiron mountain range is the main focus and just as beautiful as the rest of the scenery . That was enough for one day and after a nice dinner we crashed like toddlers . Up and at it for another trip to Boulder for lunch at “The Sink” which I discovered by googling local restaurants the had been featured on the show Diners, Drive-ins, and Dives . My review on the place would be stellar ! It had the coolest vibe to it and every wall was painted in a theme undiscribable other that character art and graffiti and the entire ceiling had been attagraphed by thousands and thousands of guests of the years , the wait staff was great and the food was delish and the beer was cold . Needing to walk off our lunch we headed over to a local area called Pearl Street which is a small shopping and restaurant area that lines a few blocks downtown and it has tons of shops with arts and gifts and just novelty items and just about anything you could think of while being entertained be street performers and music on the corner and panhandlers laying around with signs the simply read “for weed” (hey at least they are honest ) . There were numerous outdoor patio restaurants and bars where you could set and enjoy the surroundings and a drink or get a full meal . Over all very unique area and the culture is amazing . A quick dinner at “Red Robin“ and the day was a success . One last trip up to Estes was in order before we had to leave Colorado . The Stanley Hotel where they filmed the move The Shining is also setting in Estes in all her glory and regalness , we stopped in and walked through and seen the giant stair case which seems much bigger on film and all of the other rooms we were allowed into and few we weren’t ! And just so you know there is no big tree maze outside just in case your father goes nuts and you have to get escape . But it was really cool to see and they offer package deals as well as events and tours if anyone is feeling brave beings they have reported many paranormal sightings there by the guest . An early lunch on the roof top of “The Chelitos “ mexican restaurant was the next stop , the food was good the service could have been better but overall it was worth another visit if ever in the area again . We shopped until we dropped all along down town and came to rest at a cool little outside bar called “The Barrel” , They had live music while we were there and we introduced ourselves to the married couple that formed the group You Knew Me When , super cool people they are kind of a folky sound I would say and just jive well together , they are also on Instagram and Twitter as well as the Facebook page I linked before , they definatley deserve a follow and all social media . Waking the next morning knowing we had such a long drive home we opted for brunch in what used to be the old bank in downtown Louisville called “The Huckleberry” , Amazing mimosas and homestyle cooking for a nice big breakfast , the food was delicious and the service was also good , it was a cute place with outdoor patio seating if you so chose . We said our goodbyes and loaded up and headed back home with a lifetime of memories we will not soon forget and a ton of pictures to remind us if we ever do . I would say we had a pretty dam successful vacation and we are stoked to map out the next destination on the map . Not a usual blog post for me but I did want to share with all of you a new place that maybe you would like to visit if you haven’t already . I am saddened by the fact that our nation is falling apart . We have become divided by race because of the media and the way they have portrayed each of us in their news stories and they have the power to choose what they report and can edit anything to ensure we see only what they want us too see and because of that they have created a paranoia against assault rifles and all guns in general in order to promote stricter gun laws only because that is the idea of the men of power in order to disarm America and make us weak and vunerable . That pisses me off , we are a nation built on freedom and they are trying to strip us of that and they are having a hard time so they are (IN MY OPINION) creating senarios that are promoting gun hate and terror amongst the people and turning us against eachother by telling us we should be affraid of guns . We shouldn’t be affraid of guns we should be affraid of guns in the hands of the wrong people . Guns don’t kill people , humans kill people and personally I am very thankful for my gun that I have the legal right to carry to protect myself and my family . If you don’t agree with the gun laws or just don’t like guns don’t buy one , but please don’t try to change things for those of us that don’t share your opinion . The shooting of the officers in Texas have started a whole string of protest across our states that have the potential to turn deadly and yes they are claiming to be civil and organized but come on … people joining together in a large group all trying to prove their own point and opinions can turn on a dime . When you have people walking down a interstate blocking traffic that is a recipe for disaster in many ways , the officers are there to protect us and themselves but when you have a group of people in mass that outnumber them and they are already holding a grudge against them because of what the media has reported and stirred up in order to cause ” a situation” yet again and is it convenient that the news reports and outbreaks of gun violence happen just after something else they don’t want you paying attention too ? maybe , or maybe it is just a great big coincidence. I keep waiting for the conspiracy theories of the actors from sandy hook showing up in Dallas and Florida at the club , I really hope not and I wish we were a nation united again and stop allowing the media to drive a wedge between us . Ask your self this , If you were a person of african american decent and you are at one of the protest against the police officers and things get out of hand you get injured and the only person that could save your life was a white policeman , how important would the protest be at that moment ? Would you turn away the medical help to prove your point or would you take the help and accept the fact that we are all equal and the violence is nonsense and we need to stand together and save our country . To all of the officers putting on your badge every morning and kissing your families good bye as you walk out of your homes , Thank you . Thank you for risking your lives over things that are out of your control and striving to maintain order in our communities . I am not stereo typing anyone , and I am not grouping any race or saying just because you are black, white, asian, indian, red , blue or purple that we are all acting the same as everyone of our same skin color , Im saying please be careful and look around at all of the good we have and stop with the violence and love yourselves as well as your fellow Americans .

Hey guys , I just wanted to write today about taking a road trip !!!!! So exciting , we have a 40 foot motorhome so we travel differently than some others may in the fact we don’t stay in a hotel . So I thought I would share a few things we have learned in order to be ready to hit the road . Once you have figured out a destination the planning begins . First thing I would suggest would be to check the local weather where you are going for the timeframe you will be there so that you can pack accordingly and plan your activities . Once you are ready to start your check list think outside the box , If you are going to board your animals or have a family friend check in on them be sure they are familiar with eachother since the pets will already be a little confused as to were the humans went and be sure the caregiver knows of any meds they need or nervous habits to watch for. Once the fur babies are takin care , pack the most important things first as to not forget them (medicines, emergency numbers etc. ) and of course pack the cloths for the season and the weather that is expected and always pack extras because you never know ! The basic bathroom bag is self explanatory . Now the prep work begins , I am a list maker and without it I would I leave the house with my purse and not much else, there is a story of our first lake trip of the year that my kids still won’t let me live down which I forgot milk, hamburgers, and of course the dog food , all of the important stuff ! First and foremost , SAFETY on the road , always have your vehicle or RV serviced and all the fluids and tire pressures checked and it is always a good idea to bring along a roadside emergency kit . Once you are road worthy it may be a good idea to call your insurance agent and just double check your coverage for road side assistance and towing in case of a break down on the highway and be sure to carry all required documentation for such coverage . You should also call your bank and give them a heads up that you will be traveling and ask for a adjustment on your daily spending or ATM allowance on your debit cards and just so that they know so that your account doesnt get flagged for suspicious activity and you are stuck out of state with no funds . Once the important calls have been made you can plan the fun stuff . You can google the area you will be visiting and find a tourist guide or event calendar that shows all the festivals or fun events coming to the area and call ahead to make your reservations or order tickets and find the best restaurants around . Take into account the possibility of a rain day and have a plan in motion just in case so you aren’t bummed when your out door hiking trip falls through . Getting ready to hit the road and it is easy to forget the stress of the road and the tempers that can flair when everyone gets restless and ready for a break but don’t take it personal just remember you are about to have blast ! If you are traveling with kids be sure to have things to do to keep them busy on the ride so you don’t have a total screaming break down and have to leave one of them at the nearest rest area . As for us we have a teenager so she is pretty self entertaining unless of course there is a unexpected dead battery on the Iphone then the safest thing to do is give her food as a peace offering and keep the tantrum at bay . Speaking of food , we always pack plenty of snacks and easy to eat food for the ride and stock the fridge with things in case we need to have lunch or dinner while on the road and don’t want to stop at fast food . Just a few more things to bring along are road map , flashlight, batteries, and if I can give you the most important advice of all… bring extra toilet paper !! This is considered a dutch snackfood and is called a kapsalon , which translates to “hairdresser” . I actually seen it in a video and had to find a recipe ! I found quite a few but it called for a meat called shawarma , which I traded out for steak . I failed to get step by step pictures as I wasn’t sure I was going to be posting it but once I tasted it I knew I HAD TOO . Hopefully you will understand my directions as it is pretty simple .
- Small bag of frozed seasoned fries
- 10-12 ounces of steak sliced thin against the grain
- 8 slices of guida cheese
- 5 Tbs mayo
- 2Tbs plain greek yogurt
- 1 Tbs lemon juice
- 1 1/2 Tbs minced garlic
- 3 cups shredded lettuce
- 1 cup diced tomatoes
- 1 cucumber peeled and sliced
- 1/2 purple onion diced
- 1 cup mushrooms diced
- S & P
- Start by laying the fries in a single layer on a baking pan and cook according to package instructions .
- While the fries are baking cook the steak in a skillet on the stove top with your favorite spices ( I used Beasts secret blend ) cook until throughly done and nice and tender .
- Then I added a nice teaspooon of butter to the steak and tossed in the mushrooms and cooked until tender .
- Next comes the garlic sauce . mix the mayo, yogurt, minced garlic and lemon juice and stir it until completely mixed (feel free to add more garlic if you want more garlicky flavor) add salt and pepper to taste .
- in a 8X8 baking dish cover the bottom with the cooked fries and then top that with the steak mixture and drizzle a little of the garlic sauce over the steak , cover the entire thing in gouda cheese and place in oven on 350′ until all the cheese is melted and then turnon the broiler on low just to get a nice brown crust but be careful it will happen quick . once it is a golden brown take it out and top it with the lettuce , tomato, cucumber, onion and nice helping of the garlic sauce and prepare yourself for the taste explosion that is about to happen !
The mixture of the crisp cucumber and the garlic sauce is a nice fresh taste against the savory steak .
I hope you love it as much as we did and the possibilities are endless with this one… could use chicken or pork .

BEASTS JACKED UP ANGRY WINGS
Here it is !!! I truly hope yo will try these I know you wont regret it .
What you will need :
• approx. 2 lbs chicken wings (seperated from the drumstick part)
• 1/2 cup (or more !) of Jack Daniels
• 1/2 cup Coca-cola
• 2 Tsp brown sugar
• 2 Tsp soy sauce
• 2 cloves of minced garlic
• 1 tsp paprika
• 1 tsp cayenne
• 1/2 Tsp garlic powder
• 1/2 cup white flour
• 3 eggs
• oil for frying
• 2 Tsp water
How to do it:
1. Start with a dutch oven or heavy stock pot big enough to safely fry the wings in
2. lets start with the sauce, add the sriracha , whiskey ,coke , brown sugar, minced garlic, soy sauce in a sauce pan and bring it to boil then reduce the heat and let it reduce down and get thick and delish . keep stirring it occasionally .
3. Next you want to get your wings ready for their appearance on the stove top . You want the wings cleaned and dried and as close to room temperature as you can
4. First add the water and the egg in a shallow dish for dipping the wings
5. In another dish mix the flour, garlic powder, cayenne, paprika
6. Heat your pot with about 2 inchs of oil on the stove until up to temp for frying .
7. Start by dipping the wings into the egg mixture then into the flour mixture until coated and then carefully drop them into the hot oil and fry until golden brown and cook throughly (about 7 minutes )
8. Let the wings drain on paper towels or wire rack while frying the rest of the wings in small batches , be careful not to overfill the pan so you don’t risk a oil fire or burns .
9. Once you have your wings all fried brush them all with the sauce mix you made in the beginning and put them under a broiler on the low setting until nice and sticky and ooey gooey good .
10. Take them out and be careful they will be scalding hot ! Grab some ranch or some blue cheese dressing on a bunch of napkins and go for it !! ENJOY
Summer seems to be the time to clean out the garage and the closets and declutter the haul of winters treasures I just couldn’t live without .. I MAY be a borderline hoarder !!! But in my defense I do not live alone. Over the course of the winter months the garage takes some abuse when it comes to storage and organization , when summer rolls around and it is time to drag the mower out for the first time you raise the garage door and realize the could be a family of wild beasts living in there and you wouldn’t know it through all of the life jackets, umbrellas, jetski and the rest of the mountain of objects stacked in there like you were playing a giant game of jinga the past few months . All you can do is shake your head and grab a adult beverage and commit to the long tideous job of sorting and stacking in the driveway . Once you get in the heat of the battle you realize you have 9 gas cans , 14 lawn chairs 3 rakes and some things you dont even realize you had bought . Now is the time for the seperation anxiety to set in as you argue outloud with yourself just as to why you need to keep every single thing . It isn’t until you turn aroung and can no longer see your car at the end of the driveway do you give in and decide to let some of it go before your husband threatens to sell you to the highest bidder . Take a deep breath ….. you can do this. I turned to pinterst for some good storage ideas which I will link here . Just go at it one item at a time and honestly ask your self if you haven’t touched it in the last 6 months do you really need it ? and if the answer is no then ask your self is it a donation or a garage sale treasure . once you have overcome the freak out from letting go it’s time to restock the garage with all of the lucky little keepers that get to stay . Think about it as a strategy as to what to put where , meaning the mower will be used more that the christmas decorations at this point in the year so don’t put it in the back corner . once you are all done and it looks nice again threaten your entire family to not mess it up and smile like a psycho so they know you are serious and set back in your lawn chair with another cold adult beverage and just bask in your victory and fully plan on doing it again next year .

Ladies if you have an amazing man in your lives hold on to him . I personally have what I consider to be the best , I swear the man has to be some sort of saint to put up with all of my crazyness . They say true love is hard to find and even harder to keep but as long as there is a mutual respect and the love is deep your hearts can overcome any obstacles . Our story is different in the fact that it started when we were kids and dated and then lost touch for many years before reuniting and starting over and the rest is history . Many families join together to form one blended family and that is a huge accomplishment when it flows smoothly , granted there are always going to be sibling rivalry and the normal arguments . I can honestly say I feel like I chose the perfect second father for my kids . He has never treated them any different than his own and has always showed them the respect that they show him and for that I can’t thank him enough . As for myself , he truly is my soulmate . He knows my mood without asking and he knows when I need a little extra affection or when I may just need some space to myself and he never complains . Heck he even finshes my sentences .He is one of the most intelligent people I have ever known and has taught me so much about life in general and the way of the world and the fact that the noone owes you anything if you want something go after it . He has a way of encouraging me to be a better person and to strive for success without judgement . All he ever wants is for me to be happy and will stop at nothing to ensure I smile and laugh daily . A commitment is something special between two people that is not to be taken lightly . Couples these day are so quick to marry young and view divorce as a quick fix rather that stand tall and face their issues as a team . In my opinion young adults today need to be shown a better example of what a healthy relationship is supposed to be like ,What happened to the idea of staying together and celebrating 60 or 70 years of marriage ? Todays society thinks it’s ok to sell them selves short of finding love and loving someone back as if they aren’t worth it , everyone deserves to have someone to share their lives with and have a companion they can stand beside and be proud of . In our relationship we still set beside one another on the couch and hold hands in the car and never let a day go by that we don’t say I love you numerous times . Our kids joke that we are “relationship goals” and I think that’s awesome that they see us happy and would like to someday have the relationship we have . Our house is crazy most days with all the the laughs , jokes and shenanigans that go on on a regular basis and I swear a normal family would think we were insane if they could see inside our walls when we are just being normal and I wouldn’t have it any other way . Life is short , enjoy the ride and love your spouse and be thankful you have found that special someone too love you back . I love you Beast … Blondie
First off , Thank each and everyone of you that has subscribed and helped our blog grow . I have recieved so many comments and such nice words about what I write and it makes me feel good . I didn’t imagine it would take off like is has and I can now smile knowing I did it . You like me , you really like me ! What do you do with your summers ? Do you plan an annual family vacation with the kids ? Do you hate the heat and choose to work long hours and go home to the A/C ? The kids are out of school and getting restless and it’s time for some R&R !! It is important to spend time with your family and friends and relax while you have the chance . We have our RV and love the trips to the lake and plan on a trip soon and just relax and regroup . It doesnt have to a long trip with a ton of highway miles staring out the windshield , it can be grabbing a tent and cooler and heading out to nature to just be centered and forget the hussle and bussle of daily life and set along the water and just listen …. listen to the waves slapping the rocks and the leaves wresting , birds singing and look up and just imagine how tiny you really are in comparison to the sky and clouds and suddely your prolems aren’t nearly as huge as they one seemed . Take the moment and breath deep and figure out how to fix your situation and make a solid plan and I promise once you cleanse your brain of the static of everyday you will feel better and more confident . As a kid we never took a family vacation , instead we spent alot of time at the local swimming pool or the occasional trip to the lake with the parents and their friends . I can still feel the massive sunburn on my shoulders as we crowded into the pop up camper with sand in the sheets no A/C ! We try to get away with the kids but with only one still at home its pretty hard to get everyone in the same place at the same time and that is fine , we all have our lives and we make the best of the time we do get to be together . Anyone else empty nesters that are new to just being the hubby and you on trips ? pros ? cons ? I have spent timeless hours reseaching the best places to visit that are close enough to not spend most of your vacation on the road and actually getting to enjoy and be able to see beautiful things and eat great food . I have a few ideas and counted the miles ! Take the time to enjoy if you can and if not that’s ok too , even a day trip can be healing and prepare you for the work week ahead . Step out of your comfort zone and throw the kids in the car and go see something , your kids will remember it when they are left behind when they are grown and who knows maybe they will love it and carry on their own trail . And if it is just you and the hubby love every minute of it . You have taking your adult years to raise the kids and provide for them and now it is your turn and without regret YOU DESERVE IT ! Set back and relax and enjoy the summer and once it gets cooler out head the other direction . Be sure to wear sunscreen, sun your buns, and live on .

It is with a heavy heart that I set down and put my hands on the keyboard searching for just the right words and there simply are none . The news and media are flooded with the reports of Orlando today and the speculations of what happened and the pictures of loved ones that will not make it home to their families and it is such a shame what our nation had turned too , I’m not a political person as I am not educated nearly enough on the subject, not because I don’t care to learn but but simply because I don’t care if you are a democrat or a republican or whatever other party the goverment has arranged . We are all simply AMERICANS and as a nation we have fallen apart and turned on our neighbors because of race, religion, sexual preferance, or and other reason one can find to judge another and it is sickening . Shame on us for allowing ourselves to be so weak and unwilling to stand back to back to take back what is supposed to be the greatest nation . There is a 305 foot tall woman holding up a torch and a tablet in new york harbor that is to resemble the freedom of america and her declaration of independance . With the 4th of July coming up soon we should all remember that we are not our own enemies unless we so choose to be and so many have made that choice . There are so many debates over gun rights and mass shootings and it always comes back to the “assault rifle” killing people …. NO mentally ill or deranged people are killing people and falling back on the second amendment as a security net . I have inserted a article on that subject for anyone who is unfamiliar . These people are slipping through the cracks and I dont care how strict they try to make the gun laws or the punishments for not abiding by them , folks will always find a way , especially if the thought of hurting a group of innocent people is their intention. And it’s not just guns being used , the Boston marathon was a bomb as was the Oklahoma City incident and the stabbing that never made the media explode as it should have . I don’t care what religion you follow or what flag you fly but in America we fly Old Glory and ask for that to be respected and and if you choose not too then politely dont share our soil . This is my blog and all opinions are my own and in no way am I asking anyone to share my beliefs but I am asking for peace amongst ourselves and to stop spilling innocent blood . I started my blog as a hobby and a way to express myself and as the days go by and the bigger it gets and the more I learn the more I see others making money from their blog . WHO KNEW ?? so i started reseaching the possibilities and granted these ladies are ruthless and are hitting it hard fulltime and are way more knowledgable about it than I , but I have learned alot from a facebook group I am a member of and it is all bloggers and we all ask questions and share successes as well as failures we can all learn from eachother . I have a family and a fulltime job so I blog when I can and it entertaining and now I have learned about affiliate programs , and sponsored post and ads and thing that people use to make a living and kudos to those doing it full time in their pajamas at home with their kids and some day it may happen but until then I’ll continue to do my thing and learn the best strategy to to market our brand and we have a few irons in the fire with ideas and until the proper trademarks are in place I will leave you in suspense !! The smell of fresh coffee and the sounds of nature with the birds chirping and leaves wrestling in the breeze is the cheapest form of therapy . It is just you and your thoughts and your free to dream or imagine anything your heart desires or simply reflect on past events or smile at the memories that pass through your mind . As I set here this morning alone I am free of worry or sadness Instead I am excited of the endless possibilities that lye ahead ! I have a beautiful healthy family and we are a strong unit ,there is nothing we can’t do as long as we have eachother . The future holds nothing short of what we can imagine we can achieve and that is alot !! Don’t like your situation ? Change it… you are in control and you CAN do it . Life is too short to spend your days making a life you no longer have the time to enjoy . Wake up everyday and live simple .. don’t work 70 hours a week to afford the brand new cars and the fancy home that will someday be empty once all of your baby birds leave the nest . Instead take the time now to enjoy all the things you can see ,everything that your eyes can possibly take in while you are young enough to fit it all in . I am jumping back in full force and I am ready to take control and mold our lives to what we want them to be and when it comes time to settle down and enjoy our wonder years we will never have to say “what if ” or “I wish we had ” . Today is monday and the start to a brand new week that give me 7 brand new days to to do something amazing with and I plan on not wasting a second of it . I am not usually a spiritual person for my own personal reasons but as my last blog post revealed I lost my son as I feel because of that I have become more patient and forgiving. Not because of some cloud parting epiphany but because I see now that life is too short and I don’t want to waste any more time being angry or hateful . I have spent many years judging others not because I felt superior but because I was impatient and thought “what an idiot” get out of my way I have things to do, and now I step back and say to myself what is there situation ? What are they dealing with ? People probably pass by me on the street now and not knowing me from Adam or the pain I now carry , I don’t wear a badge that says hey guess what … I prefer it that way, I don’t crave the attention . In the past week there has been two instances put before me where I was in the position to help a total stranger and expected nothing in return but the gratitude on their faces was payment enough . It felt really good to reach a hand out and touch someones elses heart when they had no idea mine was still shattered or of my story , that in itself helped me heal just a little more . I hope to move forward in life a little more forgiving and understanding by learning how someone can be as normal as I am and be crushed inside fighting their own demons and if I can brighten their day just a smidge by offering just a simple act of kindness then so be it . I will be on the look out for others with a frown or a defeated look and will always try to help even if it is with a simple smile and a hello . I hope you all will do the same and keep in mind we don’t always know each others stories so let’s not prejudge and become a much friendlier nation and help one another and remember … Always stay humble and kind.

I have not been blogging lately because I lost my son to an automobile accident on May 15 . I haven’t shared alot mainly because I don’t know how . I only know that my perfect son was takin from us far before his time . His smile would light up my world as soon as I seen it and to hear his laugh was amazing and now all I have left are 20 years of memories that I must hold onto and carry on with him in my heart . He wouldn’t want me to be sad and drag on through life he would want me to live it to the fullest and make the best of everyday and enjoy it for him and that is exactly what I am going to do . Any parent should never have to lose a child no matter their age and I now know the crushing feeling in my chest that is empty for now until I allow my self to be ok and to start to heal for my familys sake , they deserve to mourne and have grief in whatever way that helps them cope and it is my job to stand tall and help them in any way I can . He left behind 2 sisters and a brother , 2 of which are older than him and they both live in other towns so I have to hope they will reach out to us when they need to and allow us to help them heal . His youngest sister is 16 and she lost her best friend and it wouldn’t be fair for me to crumble and not be there for her when she needs me the most and that goes also for my husband , He held me up when the doorbell rang and we got the news that every parent fears and at that moment time stood still , he is the warrior that carried me through the battle field of the funeral planning and arrangments and he protected me when I needed it the most and now it is his turn . We have welcomed Jakes fiance into our home until she is ready to step back out into the world without him . Now that things are calming down and I look around the house and see that the fresh flowers sent by many are starting to wilt and the casseroles are dwindling from the fridge and it is time to go back to work and resume life as normally as we can . Granted our lives have now shifted and will never be the same but for our own sanity we have to continue as he would have wanted us too . Now comes the time to answer the tough questions and do the dreadful chore of going to his house and packing his things and finalizing all the loose ends for him . I am a firm believer in seeing signs of a loved one that has passed and I see Jake daily so I know that his is still close and that brings me comfort, so until we see him again we will love life for him and continue out the plans we all had and will make sure he gets what he wanted ! I’m not sure if I will continue to write blog posts about our loss or not but for today it helped for me put some of my feelings into words . I won’t share the details of his service or the memorials that followed because those are very personal to my family but the outpour of support and amount of lives he touched in his short 20 years was incredible to see and made me very proud to hear all of the kind things people had the share about our son , I guess we must of done something right ! For now we will charge forward and carry eachother through and live on for Jake . In my heart you will remain forever young…
Ok ladies , It’s time to get real for a second . I have a new doctor and I absolutely love her , she is very kind and helped me with my migraines and a few other issues and when we first met she wanted to do a ton of test just to get established and have all fresh medical history, so with that being said . She started referring to everything as for “woman your age” . Now I undersand that I’m no spring chicken anymore but come on I am only 41 and I don’t feel old . am I suppose too ? Is that why she says it like that ? Did i miss a memo ? I would much prefer that she said “woman as pretty as you ” we would both know what eachother meant but we wouldn’t have to bring up the age thing ! Age is a number not a disease I shouldn’t be freaking out . She ordered test to be done on every organ I have and took gallons of blood it seemed and short of a brain exam I had the full work over and she gave me a clean bill of health . I am happy and healthy and maybe my body isn’t the same as when I was 20 but that’s ok I wear my age proudly . Granted there are a few more grey hairs when my roots grow in but I’ll just keep dying those babies and go on , I haven’t fallin apart completely, I dont have mass amounts of wrinkles or crows feet and even if I did so what I earned all of them I promise ! I guess maybe I have that little bingo wing but nothing worth fretting over and my butt may not be able to bounce a quarter off of it anymore but it is still worth a second look and I took “preventitive measures” with the girls up front and gave them a face lift if you know what I mean and I must say they are doing alright ! I guess doc was doing her job and taking my health seriously and I appreciate that but I did give her the stink eye when I thought she called me old but now I understand why . Ladies if you are my age be sure to get your mamograms and take good care of yourselves your family deserves it . And if your doctor says “woman your age” just think to yourself that she really means woman as pretty as you and smile . I think you are all beautiful no matter our age group we have to stick together !

I have found a new mode of motivation , my family. I have always excelled in the things I have set my mind too and wanted to make everyone proud . And now that I have done that it’s time to plan for the future . I have takin on the blog and also our online stores and can see advances so far and I am ready for the next step . I have the most amazing husband and support group he is so patient and motivating every step of the way , He never lets me doubt myself and stands behind me no matter what . We are almost empty nesters with one baby bird still at home and honestly we have had kids for so long it will be an adjustment at first but im a confident we will settle into the idea in no time ! We bought our motorhome with the idea of traveling and seeing new things and experiencing every thing we have put off . Which brings us to here, we are both in our 40’s and by no means independently wealthy , I have a few irons in the fire as of now to make a living via the internet and am more motivated than ever to make this happen for us . The blog is still small and like with anything it takes time to prove yourself and gain the trust of those willing to put their faith in me and give me the chance to prove myself to them . My kids now believe I can do it , at first I got a few eye rolls and smirks but they have now seen the progress and are just excited as we are. I have made some really great contacts that are full of valuable information and I have put myself out there no matter how far out of my comfort zone it may be . I have tried a few different projects with no luck and I will just keep chugging along until one day I find the perfect match for us and can say WE DID IT ! Monty says spent many hours listening to me ramble on about different ideas and approaches I want to try and he always just sets next to me holding my hand and being very attentive and nodding his head and agreeing even if he has no idea what I am taking about he never says a negative word and for that I am the luckiest girl in the world . He also has some really good ideas that we are putting into motion and taking all of the proper steps to turn into reality so as I may be the one writing all of the blog post and doing research he is by far the silent partner ! I give credit for our success as he does me we are a team and a dam good one ! I will update on any progress and also share and leads that i can to help any fellow bloggers just starting out like us and as always we welcome and advice you may have . I started this blog as a way to share our stories and travels and yummy food recipes and to just express myself in an literal way, and then I started learning all about the ins and outs of the world wide web and the foreign language of search engines and keywords and traffic and blah blah blah ….. I was totally shocked at the overwhelming amount of videos on youtube and google searches on the subject of generating traffic to my blog . Good lord … my head was swimmng with all of the information I was trying to process . But once I payed attention and let it soak in and realized that it wasn’t nearly as confusing as I was making It I settled in and can say that I mildly get it ! First thing I did was download google analytics and registered my website with them and took the virtual tour of how the site worked and what all they tracked and analyzed and why it was important for me to know that information . It is important to track your traffic so you can see where it is coming from , for example , did the most traffic come in from facebook or twitter or in my case pinterest . That lets me know that if I share lets say a recipe , I know that that type of post is best shared on pinterest as well and I would put it on my facebook also that so my friends could see it without having to physically log into my blog but the link will take them directly to it . But if it is a fun story about my family which most of my facebook friends all know then that post would of course be best to share on my facebook only . Pretty simple . But what I was having such a hard time with was the use of keywords and why they were important to google . I’m still learning this phase and the google analytics will help with that once they have enough consistant content to create an accurate graph of my traffic and post subjects . I can look back at that graph and see which keywords are and are not good for me readers . Once I more or less understood that I moved on to SEO ( search engine optimization) which is eccentually the ability of others to find your website on each different search engine and there is actually a ranking system which I can not in good faith explain to you right now until I understand it fully myself . I will post a update on that when I have all the answers . I have however highlighted each subject with definitions to make it clearer to you if I haven’t done so . Last but not least is what they call meta tags, basically a short discription of what your content contains and what the search engine should focus on, lets say when someone is looking for an article on RV traveling and you have a nice blog post on the subject and you have “tagged” your post with the said keywords then google will know that you have that post on that subject therefore adding your website to the search results and depending on the amount of posts you do on that specific subject determines where your website will rank (like I spoke of earlier ) in that particular search engine . I have read thousands of words trying to learn the science of it and it is exhausting . There are people just like you and I that have done the research and totally understand it and they have made hours of video footage dedicated to all of this that they have uploaded to youtube which I don’t have direct permission to share so I will just say if you go and do a search in youtube get your glass of wine and be ready for information overload ! I hope I have opened a door for you all to get ready to understand the behind the scenes of a website and how the all intermingle together to make it all happen .

Ok guys I am ready to start my research on a trademark and a patent …. Let me start by touching base on what we are wanting to do without giving away too much ! It involves a food product and a recipe , If I understand right I can’t patent a recipe but I can trademark the name of it as well as the label ?? Should I seek out a attorney ? Do I need a food handlers license ? There are tons of questions and I am terrified to jump right into it but nothing happens unless you make it . My first plan of action is to contact the local heath department to determine the local laws of my area . I also need to register the business with the secretary of the state for sales tax purposes as well as get a business license which will allow us to resell our product to the public . That is only the beginning of the business side of it and then it’s packaging and label design , wholesale vendors , Another thing to keepin kind is the cost of packaging , rather you choose to self package or outsource to a third party that packages and ships from their facility . and then comes the final launch and to hold our breaths as we watch it leave the ground and hope that it flies ! We do have a really good product that I am confident in and am sure others will love it as well , I am sorry that I am being so vague on an overall scale but until I get thing moving I am simply seeking advice from anyone that has started a similar business or food based product line that is willing to share the proper channels to contact and steps to ensure it is done legally and the best strategies to market a onlne business . I have done plenty of reading on the subject and have the basic business plan mapped out I just need to understand the process and get confirmation of the information to be correct that I have gathered so far . I will leave our business email and welcome any advice or suggestions from experienced business owners that can tuck me under their wing and guide me in the right direction . Good morning ! I just wanted to share a few things I have learned along the way of building our website and setting up our blog . First off it can very intimidating as you start off not knowing much about web design but relax it get easier ! I will just tell you about my personal experience . I had wanted to do social media marketing for awhile and had started a youtube channel so I could have that platform when I was ready for it . I used our name Blondie and the Beast to start a twitter page, instagram, facebook as well as our etsy store in order to get our brand out there and noticed and then I decided to move forward with the website … and I LOVE having it at my fingertips whenever I want to share and thought you might be interested in how I did it ! First off I started researching how to start a simple blog and from that I was completely intrigued and had to know how it was done . After a few simple google searches I was off to the races . I started by brain storming what I wanted to say , what I wanted to share and would anyone read it ? Finally I decided who cares how many followers I could get and lets just give it a try as a hobby and something to entertain my brain . I started by choosing a web host and from there I bought the domain for my name (VERY important first step so that you are sure to get the one you want ) Once I had my domain I was free to do with it as I wished so I decided on a platform and signed up with wordpress and that opened a whole can of worms that was endless with design ,and themes, banners ,sidebars , plug ins and so many more that I could list but won’t bore you with my blabbering. Once I had my account registerd and linked to me web host all I had to do was create what I thought to be nice website where I could write my blog . I chose my theme ( I’m currently using “ultra” ) A theme is simply the layout of your website which you can totally customized with your own pages ,titles, galleries or any other content you want to add . It is all able to be added to at any time or rearranged as need be . You are going to spend hours tweeking the site before you are happy with it and that’s ok, it is your site and you want it to be easy to navigate and inviting to your readers . Once I had pretty much decided I was happy with it it was time for add ons , I was sure to add all of our other social media links with what they call a widget , basically a button to click with the facebook or twitter logo in it so all readers have to do is simply click and be directed to your other pages . I also signed up with an email host that manages my site and subscribers . Once you subscribe to my blog ( on the righthand sidebar for anyone that hasn’t done that yet wink wink !) you are notified with a simple form letter email that lets you know that I have added a new post . I also registered the blog with pinterst as a business and you wouldn’t belive the amout of traffic that began almost instantly ! With all of that being said it leads me to another topic that weighs heavy on my mind daily , making money online from home . There are endless number of oppurtunities where the internet is concerned . If you can imagine it I’m sure it exsist all you have to do is find the right avenue to lead you to it . I have a few ideas I am persuing and hope to share with you all soon but until them here is a link to just a very few ideas to get your mind going . There are so many things you can do , the only limitations are the ones you put on your self . Wish me luck and I hope you will follow my progress and offer any advice . Ok ladies ,(and gentleman) It’s that dreaded time of year again for the lazy girls like me that don’t have a regular excercise routine and eats like a truck driver most of the time . It is swimsuit season… and that means exposing more of yourself in public than some of us are ready for . I have always been lucky in the sense that I had a fast metabolism and could eat like a teenage boy if I wanted and keep my figure but as I get older I’m not as lucky . Don’t get me wrong I’m not body shaming myself I’m simply admitting I could shed a few winter pounds and tone up what once used to be flat . Being only 4 foot 9 even the slightest weight gain is noticable on me . My question to you guys is what is your go to method to loose a few pounds ? There are so many fad diets that I don’t believe in and the lingo can get confusing for a amature. Whish is better , low carb ? high protein? high fat no sugar ? there are so many options I’m wondering what has worked for others (and not the spokesman for a commercial diet company) . We do have a home gym with a treadmill and weights that I will be torturing myself with and doing some yoga . I have basically a plasitc back due to scoliosis surgery so I can’t get to high impact but I’ll do my best . I have been loving warm green tea in the mornings and drowning myself in water throughout the day and then the guilty pleasure that includes barley and hops of course isn’t the most healthy or slimming but hey, a girl has her vices ! Any comments or suggestions on some things that have worked for you would be appreciated . And all of you ladies standing in that dressing room trying on the bathing suits … don’t worry there are others out there with a few stretch marks from the child rearing days and most of us need a little push up here and there but we are all still beautiful and should be proud of our bodies no matter the shape or size . and remember my moto , If you can’t loose it , TAN IT !

How much is your mental health worth ? We as a society have become so obsessed with money and material things as a trophy of stature that we have forgotten how to relax and enjoy our lives . I for one am guilty of it , I got into a habit of working a ton of overtime to where now I have myself convinced that I NEED to work that much because I have become accustomed to the money that is brings . And as a double edged sword I complain about not having the extra time . So I have decided to make a change . We have turned down invites because we have to work . That is basically telling your friends and family that they arent worth the amount of money that you would make for those extra 2 hours on a paycheck . Would you ever look at your child when they asked you to hang out and ask them how muchthey are going to pay you for your time ? virtually that is what we are doing when we choose work over a social life . Is that newest pair of shoes or handbag worth the time away from home working overtime to pay for it ? It is time we stop being spoiled and be content with the simplest of things to be comfortable , as long as you have a safe home and plenty of groceries you should be glad , there are many that don’t even have that . Personally we have more than enough for our needs and although we love our big house and “toys” in the garage we would gladly give it all up for a more simple life with no stress . Technology is the same way , We can set on opposite ends of the couch and not talk for a good hour as we both have our faces in our phones while we complain about the lack of time to excercise , imagine if I were to be on the treadmill for that hour or doing a excercise routine . Moral of the story is that your happiness is worth more that your bank account . If you can laugh with your family and go to bed everynight with a clear conscience your are wealthier that you think . I came form a pretty poor childhood with not many material things so as an adult I felt like I needed to HAVE things and give my kids everything that I could when in fact they have always had plenty and it was me giving them the extras that I thought they needed . They only needed my time and the essentials . As we are all grown now we look around and see how spoiled we are and are greatful for our accomplishments and don’t have the sense of entitlement as we know how hard we worked to get this far . So I guess the saying been there done that comes to mind , now I am ready to scale down and enjoy more of my time not worrying . I am going to pay myself from now on with down time instead of overtime . My family deserves more of me and less material things . Please take a break today and just set without your phone or tablet or laptop and have a conversation with your spouse or kids , take time to excercise and be heatlthy .We will all be suprised at the amount of happiness that will come form just a slight change in schedules and I’m totally looking forward to it !

One thing we love to do on the grill or campfire is cook in foil packets . An all time favorite is the potatoes
• 3-4 large russet potaoes
• 1/2 of a medium onion diced
• 1/2 of a bell bepper diced
• 6-7 nice sized mushrooms diced
• 1/4 cup finely diced jalapeno slices
• salt and pepper
• kelbasa sausage (optional)
• 6 pieces foil in approx 12×12
Start be washing you potatoes and cutting them in to bite sized pieces like you would for fried potatoes , and lay out your foil and put equal amounts of potatoes on each foil .
Then add the onion , mushroom, bellpepper and the S&P (sausage if you choose to go that route )
Put a 1/2 teaspoon of butter on top and close your pouches beign sure all edges are pinched and folded over to prevent leaks as it cooks .
Place the pouches on the grill of coals in indirect heat and let cook for 15-20 minutes or until the potatoes are tender with a fork .
Open them very carefully away from you as the steam will release when opened. chow down they are delicious !
Let me just start with a disclaimer , This is just MY opinion and I am just a little ol blogger with a attitude sometimes . So what I have noticed this week was all of the Facebook and Twitter posts about the celebrities that have recently passed away . First off there was Chyna who was popular in the wresting world in the late 90’s early 2000’s , There was a ton of post about her and honestly how many people still followed her career ? And then there was Prince … He was of course huge back in the day and alot of old school rockers still rocked his CD on a road trip (we are guilty ourselves) . My point is I find it absurd the amount of post and RIP’s and pics that are posted after a celebrity passes away . If you aren’t following their careers currently don’t jump on the band wagon after they are gone for social media . I read post that read ” Ow my god I’m so sad and I’m going to miss them so much ” . Going to miss them ? Did you know them ? Did they call you on the weekends ? I may be wierd in my thoughts but I’m saying there are local celebrities you don’t know that pass everyday . For example , soldiers, teachers, doctors, cancer patients and I don’t see an overflow of facebook post about them or how much they are going to be missed even though they are the exact same kind of stranger to you personally as a wrestler or a singer who are both just a stage personality in reality . It is sad the amount of attention we invest into a stranger and just because they have expensive houses and tour buses they get more grief then a 4 year old who has had cancer their whole lives and lost the battle or a 18 year old man who puts on fatigues everymore morning before heading to the chow hall . And again this is just My opinion and do not expect any one to agreee nor disagree I am simply saying that maybe we should learn to focus on more important things that all around us on a daily basis.

Maiden voyage was a success ! Jezabel did great ,we went to our favorite lake spot for the weekend and pretty much got all the kinks worked out of our new process of setting up a motorhome now instead of a fifth wheel . I must say she is nice and comfortable . A few things we noticed were the stability , In the fifth wheel you could feel when someone walked from one end to the other and this this a rock , cant feel a thing . Also the noise reduction , it is virtually silent when the doors and windows are shut . Great nights sleep , plenty of fridge space and storage inside and out . overall a good trip for the first time having it out on the highway . I was very impressed with the ride and how smooth it is for being such a big coach , it wasn’t rocking us around and the noise level wasn’t an issue . We jammed out to some oldies and just cruised . The wind was a little sketchy at first but he handled like a pro ! Got her home and washed down and ready for the next trip !

With tornado and storm season coming it is going to be in your best interest to be prepared when traveling . I am the first one in my house to throw on a football helmet and a set of goggles at the first sight of bad weather and lord get out of my way if the tornado sirens go off ! But at home most of us have the safety of a basement or storm shelter available but what if you were out at your favorite camping spot and mother nature desides to takes a turn for the worst ? Most state parks will always have a emergency shelter of some kind , rather that be a public building, shower house , or simply a bathroom . You should always ask the park ranger or attendant at the registration building where those shelters are know the way there in case you need to high tail it in a hurry . It is also a good idea to keep fresh batteries in a weather radio and a flashlight and any emergency supplies ready to grab up on your way out the door . Common sense would tell you to NEVER stay in your RV , motor home , or tent . Stay off of the water at the first sign that a storm is moving in and pull the boats and or jet skis out in case of waves and rocks you dont want damage . Lightning is a angry demon and does not discriminate when it come to zapping ya . Be sure all members of your family know of a meeting spot after a storm in case you get seperated . Also a good practice to put the cell phone on a charger if bad weather is possible that way you will definately have a way to communicate if need be, if your a re camping with now electrical hook ups they do have some really cool solar cell phone chargers on the market right now . Remember that if you travel with your dogs they get nervous too and a dose of benedryl can definately help them to stay calm and much easier to handle when in a tight area with other people . I hope you all stay safe and have beautiful weather but just in case be careful and just be prepared so you wont have to panic and scramble without a plan at the very worst time of a storm .

I have been doing my research on the option of going solar for the motorhome . I guess we will weight the beneifits and make a decision if they would counter the cost of the actual solar set up . If you were planning on going total off grid I think it would be a definate must . You would have the freedom to go virtually anywhere the roads allowed with out the worry of looking for a full hookup sight or making reservations ahead of time and insuring they have a 50 amp power supply . I have been looking at pricing and as with anything there are a wide array of kits ranging from DIY and affordable to a professional install with very very expensive options . But you wouldn’t want to spare the cost when it comes to your power when it comes to your safety and the comfort of your RV of the risk of loosing groceries or air conditioning . There is of course a back up generator to take over when the solar power isn’t available . Do your research and make a educated decision on what is best for you and your situation . I for one will be learning alot more about this and I’ll keep you updated !

Everyone has heard of cast iron but not everyone has used one . I personally LOVE mine . when taken care of properly it will literally last a lifetime .”Seasoning” the skillet is the most important thing in keeping it around and worthy of the cabinet space . Most new ones bought at the store come pre-seasoned to a point and the more you use it the better it will be . But if you are like me and found a hidden treasure covered in rust and looking like a train wreck there are ways to bring it back to the original beauty it once was. The way that I found that worked for me is to first use steel wool and remove the rust and bake the skillet in a 250 oven turned upside down on a cookie sheet for 1 1/2 to 2 hours to allow all the oils and grease to drain off as it heats up. Remember you just baked a piece of cast iron so it will melt your skin off if you touch it , Take it out and use oven mitts to handle it and again with the steel wool to take off any rust or grease that is left , WATER IS THE DEVIL when it comes to cast iron but once you have scrubbed it clean rinse off any steel wool fibers and in order to prevent rust put it on a medium heat burner and allow it to heat up and evaporate any water and the pores will open up once hot , heat it for about 10 minutes to be sure all the water is out and then the you are going to rub it down including the handle and outside with the oil of your choice , olive oil , bacon grease, whatever you want and as it cools the pores will shrink locking in the oil and therefore “seasoning’ the skillet . Then once seasoned it will be non stick for the most part and every time you use it the seasoning will build up and be amazing ! I have a certain way that I clean mine after using it that works great for me , After im done cooking it i put about a half inch of water in the bottom of it on top of and pan drippings that are left and i heat that up to a heavy boil and use a spatula to scrape the bottom and sides of the skillet to break up and thing that may have stuck and then pour it all out and put the skillet back on the burner empty to evaporate any water for about 10 minutes and the rub it down with a paper towel with another layer of what ever oil you want as it cools and then it is perfect and ready for the next time . for heavy use or for stubborn pan drippings I use a coarse seat salt to scour the pan and then back to the steps I listed before . I have a nice heavy 10 inch skillet to use when making something in the oven in it or a big batch of fried chicken on the stove top but it is rather heavy so i also have a 8 inch skillet that is perfect size for me . then the holy grail .. the dutch oven , this thing is built like a tank it can be used in oven or on the grill or directly over a bed of hot coals . I hope the next time you see that sickly looking cast iron at a garage sale you will pick it up and try the things I have told you about to bring that beauty queen back to her original state , I promise you will not regret it ! There are a ton of recipes for cast iron for the camp fire or even the oven , google it and give it some of them a try !
Our dogs are very adapted to the lake life . I swear they know when it’s time to go and they wont get 6 inches off of your ankles to insure that they aren’t left behind . We have an elderly chihuahua (11 years old ) “Mimi” and a boxer (8 years old) “Roxy” that are very much spoiled and they love the lake . Be sure to check the leash laws at your local lake or reservation you are visiting our dogs usually free roam unless there are other dogs close by until we let them get aquainted and be sure of the temperment of the other dogs . Always take plenty of food ,treats, water, meds if necessary and even a dog safe first aide kit because you never know what could happen and would hate to be caught without the proper thing to care for you fur children . Mimi likes the water and Roxy is just now starting to get used to it , she is a huge baby when it comes to being cold . If you plan on taking your dogs boating it is a good idea to get them lifejackets just like you would any other passenger just in case they decide to take a swan dive with out permission . Also think about the fact that mosquitos can carry the infected larvae the cause heartworms so be sure to spray the dogs with a dog approved bug spray or there are plenty of homeade recipes you can find on pinterest or anywhere on the world wide web . Something else to think about is other campers who dont have dogs , I mean we as dog owners all know the risk of a open trash can or unattened dinner plate . Just watch that they aren’t nosing around someone else trash bag and getting into something that they shouldn’t or could hurt them . It is probably a good idea to keep someting in your camping supplies just in case the frisky pup tries to get a little to friendly with the local skunk… We had a couple next to us last year that let the dog out after bed time and didn’t know he had been sprayed and let him back in their camper and you can imagine to hell they went through not only to get the dog clean but also to get that smell out of the camper . When you are ready to leave the lake and head home be sure to not leave your dogs piles of “suprises” for the next camper and always check the dogs extra good daily for ticks especially if you are in a heavily wooded area . This blog will be more like information I have found by doing research on buying land . Firstly, be sure of the Deed, the are different types , the warranty deed is most common which is basically the seller guarantees he has the right to transfer all titles and ownership of the property to the new owner including all easements , water, access roads, etc. A quick claim deed is another option in which there is no guarantee of back taxes being owed or actual land survey of property lines of record of last owner ( that is what I understood it to be when researched it ) obviously you want the warranty deed . Second, Utility and water access . Be sure if power can be ran to your land , Regardless of where the nearest power pole is in regards to your property the city can refuse to run a line if it means too much work to maintain or service it for them. Also check the cost of the power being installed and if your easement allows for the actual pole to be installed . You must have a permit to drop a septic system and it must follow local code and have final inspection . If there is a creek running through your land be sure to go to the city and find out who ACTUALLY owns it , even if it runs through you property and it is a run off for the city you can not touch it . Third , Be sure how your property is zoned . If you plan to build a house it should be zoned residential and if you plan to farm or plant it should be zoned agricultural as well . If you plan to just use it for boondock camping or hunting and no utilities being ran it can be zoned as recreational . Fourth , Mineral rights, that is a whole other demon . I have just started learning about this but basically be sure that you own the mineral rights because even if there are no useful mineral there now who is to say there wont be in 10 years and if you don’t own the rights then the city or state has full access to your property to extract said mineral and to use any means necessary to get it even if that means bull dozing your beautiful house you have worked so hard on . Any way I hope this gives you a start of things to research to protect yourself and your land . I have alot more to learn and I will have a hand full of questions to ask any one trying to sell me some dirt with a bunch of trees on it . Do your homework and don’t be afraid to ask or second guess the seller . I will keep you up to date with the things I learn and hope you will leave me a comment if you know more or have experience !

Monty has been at it again ! He made us these delicious butter burgers last weekend and OMG they were good !
To make the infused butter :
2 sticks of room temperature butter
nice big tablespoon of both thyme and bay leaves finely chopped
4 cloves of garlic minced ( he used the garlic press)
Once the butter is at room temp wrap it in seran wrap and twist the ends tight to form a log style shape and put it in the freezer until firm (about 20 minutes or so )
While you are waiting on that go ahead and form your patties to about 1/4 pound size .
Season with salt and pepper and sesoned salt of your choose there are no rules
When the butter is ready cut it in slices and place one slice on top of each patty and form a “pocket” and pinch the edges tight .
Add a second slice on top of the burger to melt down when cooking
Put all of your burgers on a medium heat grill and cook until cooked threw .
Take them off and add your favorite condiments . Hope you will give them a try and enjoy
As I told you guys yesterday we went to the river for the “river run ” and I LOVED IT !! Im officially a new born river rat . It was so much fun , it wasn’t nearly as dangerous as I thought . It was just a steady pace following eachother down the river and there was a few spots where the water was a little deep but we all made it and had a blast ! We stayed into the evening and it was a little windy for a fire so we opted out on that one but all in all it was a great time . Met some new people and hung out with friends . The amount of camaraderie down there is amazing , It was so cool to see everyone look out for each other along the way and helping whoever needed it regardless if they knew them or not . There are lessons to be learned from people like that , nice to see it still exsist. I am still editing the video footage so I will post it as soon as I get it all put together .

Good morning , It is saturday and beautiful out . Lets start with a little back story , Monty has a Ram charger that he has gotten as a toy and project . Apparently it is a bad ass according the guys that also have these “toys” it is setting on big ol tires and runs like a striped ass ape. So ….. they all get together and go down to the river and do a “river run” which basically means grab your coolers and hit the river , there are trails and different areas and you go a ways then stop and drink and hang out and whatever. Well he has asked me to go numerous times and i am such a chicken I always say no , until today … I figure he always does anything I ask him to do regardless of what it is so I am stepping out of my comfort zone today and putting on my rubber boots and jumping up into the Lock Ness Whiskey Wagon ( yes that is the official name ) and heading out to the river to see what all the hype is about , i cant lie and say im not a nervous wreck but all in the name of love I will go . I am taking the go pro and the video camera to get some good footage hopefully and I will post them here and also on our youtube channel , if you haven’t already subscribed please do so ! I will leave a link to our channel below . Wish me luck and I will post again when I have my feet back on solid ground at home .

When you set back in your chair and just think about your favorite place to live where does your mind take you ? Most would think of a big fancy house with a pool on an island or in the tropic . I must be odd because I would choose and nice piece of land with plenty of trees and a spring or river that we could harvest our own trees and build a cabin and a nice big barn and dig a pond to set by and watch the sun go down . A place totally secluded and lacking the sounds of town , A place you can wake up and set on the deck with you coffee and watch wildlife stroll through the back yard and hear nothing but nature . Have a nice big garden to grow your own veggies and chickens and the dogs could roam free and explore every corner they could find . THAT is my idea of a dream home . I have done extensive research on the subject of a “homestead” and have learned it isnt near as far fetched as most would think , rather simple to accomplish as long as your are willing to work hard and sacrifice the daily hustle and believe me there is no doubt in my mind that we could do it !! So dont be suprised when one day we sell off all the assests and buy a big chunk of land and dissapear !! The only decision would be which state ? If you have dreams follow them until you achieve them and never let anyone tell you that you CAN’T . Once you have a plan all that is left is to execute it and smile when you are finished.

It is a beautiful day today ! Saturday and the end to a long week . As I set here listening to Monty snore on the other end of the couch during a late afternoon nap that he totally deserves I am planning sunday breakfast for tommorrow . The dogs are napping and I have the sprinkler going to give the yard a boost of energy since the weather is so nice . We had a great week at work and I have been doing a TON of reasearch on the blog in order to make it great for you guys ! Kansas cheese steaks
- 1-2 pounds of steak
- 6 hogie buns
- 1 large bell pepper sliced
- 1 small onion sliced
- 1 carton of mushroom washed and sliced
- sliced provolone cheese
- salt and pepper
Pre heat oven to 350 degrees
Start by slicing the steak really thin and across the grain and put it in a hot skillet with about a table spoon of butter and season with salt and pepper and whatever other seasoning you want ( seasoned salt , garlic powder etc.)
While that is going go ahead and slice your onion , pepper and mushrooms into bite size pieces .
Start another skillet with a nice tablespoon of butter and once it is hot and melted toss in the onion and pepper and cook down until soft .
Cook your mushrooms in a about a half teaspoon of butter until they turn a nice brown color and add them to your onion and pepper mix .
Once your steak is cooked through and tender add it to the veggies and cover the mixture with cheese and put a lid on it to steam the cheese and get it nice and melty !
when it is all melted and ooey gooey spoon a nice size helping into each hogie bun .
Here is where the magic happens… wrap each hogie in a sheet of aluminum foil and fold the ends tight to keep your cheese from escaping .
When you get them all wrapped up put them in the oven that has preheating and let them bake for 15-20 minutes to warm your buns and get nice and steamy .
Be careful when you take them out and unwrap them the steam will burn you …

I was sent a message today by a friend that really got my mind to turning , she sent me a link that she was super excited about and wanted to share ! I was excited not only about the link and learning new things to help with the blog but also because she took the time to let me know she had noticed the things I have been working to build and that felt really good to just get feedback and to know that my efforts werent going unnoticed . It is so easy to get down on yourself and question yourself when your scared of failure as you are learning all about something that might as well be brain surgery or space exploration . Your brain is accepting of the new information and you are trying to catalog all of it on top of putting yourself out to the public and praying you dont scrutinized for trying something new ! My best advice today is to always let someone know that you are supporting them and you are in their corner and are excited about their adventure ! The smallest bit of encouragement with go far with someone and that just might be the push they need for that day . So be kind to eachother always and strive to make someones day !

As we get older we question alot of things in our lives . Do you ever set and reflect on the past and ask yourself “what if” ? Like what if I would have taken a different path with my career , or what if I would have raised my kids differntly , what if I would have grown up in a different part of the country ? I think about things in my childhood and think how the hell did that happen or why and there is no good explanation except it was a lesson learned and a building block for who I have become . I often wonder if I deserve a good ol fashion nervous breakdown yet, or simply a mid life crisis, and then I smile and just think to myself , girl you are a rock star for keeping your head on straight this far ! Do you think there is an age limit when you are required to just accept how your world turns ? Is it ok to be selfish once your kids are grown ? What if you wanted change and to explore new things . Is it ok to just throw responsibilty in the air and run as fast as you can even though you were always led to believe that being a grown up is supposed to be boring and routine day to day . I think not…. I say screw it and take the chances you were afraid to take ! Your not getting any younger and you have done your time for others now its your turn . Buy that rediculous outfit that you have told yourself no to, Take a trip to beautiful place , change your hair , do something that scares the hell out of you . Point is don’t get stuck in the mindset that because we are “grown ups” that life is all schedules and timeclocks . Be brave and be proud of your accomplishments you have in your life . You deserve to celebrate the saccrifices you have made to be successful , dont grow to be resentful and think that you HAVE TO behave in a certain way to keep your reputation untarnished . I could go on and on but I will wrap it up by simply saying life is too short , so dont give your mind any more ammo against yourself with the “what ifs” and get out there and live it up , you deserve it !

I have seen this article many times and am intrigued … What a great way to see the country ! If you had the time and a great travel partner ( which I do ) it would be awesome . Load up the fridge and fill the tank and take off and stop off here and there and just take your time and enjoy the sights , the smells , the scenery . Imagine the pictures you could get ! I definately want to do this trip someday . It will be on the “TO DO” list . Hope you all enjoy the article and can do something similar if not the same .

Getting out of the car this morning at work and being like 95% of america complaining that it was monday. Then I realized, monday means I have a brand new week to do something with . I have 7 full days to come up with new ideas or projects . Now its just to figure out what to do with it , I am still trying to find my niche with the blog and which direction I want to take it so I figured just writing is a good start. I promise not post and bunch of updates on what I had for dinner or when I get my hair and nails done ! I would just like to inspire someone else to take the dreaded monday and turn it into the first day of the week that you get to start fresh with the new ideas you have, even if that means simply trying a new recipe for dinner mid week . It doesnt have to be a life alterting event just do SOMETHING . We all find ourselves in a rut once in awhile and it is up to us to crawl out of it or laydown and accept it and it will always get better if you so choose to MAKE IT better ! So look yourself in the face and tell yourself you are beautiful (or handsome ) toss your hair back and smile because you have a monday to start your week with . Read an article or find a website for inspiration or just cruise through pinterest and facebook . Maybe send an email to an old friend you havent spoken to lately , you never know how much that may make their day . I hope everyone tries a little something and has a great week !

Sunday are our days off to regroup and relax , Our adult kids( the 2 that are close enough to home )know it is a standing date for sunday breakfast every sunday at 9:00 AM they also show up with out grand dogs ! we have breakfast and usually always throw some manly looking meat on the smoker for the week ahead . Todays menu was fried tators and onions , ham steak, bacon and cheesy scrambles .The dogs all got their share and are now basking in the sun like kings and queens . I am working on the blog and managing our online etsy store while everyone else just kind of does their thing .
